Kent squid season typically occurs in the Autumn, usually from October to December.
This is when squid, particularly the European squid (**Loligo vulgaris**), migrate closer to the shores of the southeast coast of England, including Kent, where they are caught by local fishermen.
During this time, the squid are plentiful due to favourable conditions in the water, making it the prime season for both commercial and recreational fishing. Squid fishing, or "squidding," often involves using jigging techniques with specialized lures that mimic small fish to attract the squid.
In addition to being a popular activity for fishermen, squid from Kent waters are prized in the UK for their quality and are used in a variety of dishes in local restaurants and markets. The season offers a fresh, sustainable catch, contributing to the local economy and culinary scene.

Combine the Cornflour, Salt and pepper in a bowl
Whisk an Egg white and add the squid
Lift the squid from the Egg and shake in the Cornflour mix, carefully add to a hot pan of oil and fry for a few minutes.
Serve with skin on fries, salad, a wedge of Lemon and Chilli Jam 😋
