Celebrating autumn at The Foundry

This autumn has been busy for The Foundry and Canterbury Brewers and Distillers.

Starting with our two Kent Green Hop Beers – Challenger Saison, Holy Academia. Having our hops blessed by the Canterbury Christchurch University Chaplain Dave Stroud – we feel so lucky to be able to produce at least one Kent Green Hop Beer every year, and this year it was 2, due to availability of hops. Mother nature has full control over what we can produce, and once the beers are gone, they are gone and we go again next year!

Continuing with our mushroom growing adventure, we are delighted to share that we have successfully grown Lion’s Mane mushroom, sustainably, utilising the waste grain from our whiskey distillation process. We are busy brainstorming and trialling ways to use the Lion’s Mane other than in the restaurant. But in the meantime, after extensive testing by the staff we can report that the flavour and texture is truly amazing! It has been so exciting for us to watch the Lion’s Mane grow – it’s like no other mushroom we have grown before and looks simply out of the world.

We are taking part in Canterbury Cocktail Week (7-20 October) and have designed the Smuggler’s Tipple especially, using our Smuggler Sam’s spiced rum, lime, mint and angostura bitters – we are so excited to support this community initiative and look forward to seeing all the cocktail fans in the brewpub.

Our Christmas menu will be going live I the restaurant from 18th November-21st December, bookings are required, and popular dates are becoming full. Once again, this year we make an appearance at the Canterbury Christmas market in the Whitefriars area – opening at 10am on 15th November, Jodie and the team will be there with a wide selection of beers, spirits, and gifts options as well as our mulled spiced cider, a best seller from last year. In addition, we are so excited to have a stall in the historic Canterbury Cathedral precinct – adding to the already magical shopping in Canterbury – we are really looking forward to meeting an even wider range of visitors to Canterbury.
