Using Karimix Madras, Karimix Tandoori or Karimix Laksa Curry Paste
SERVES: 4 as a main course
PREP: 5 minutes
COOK: 20 minutes
INGREDIENTS
175G Karimix Tandoori Curry Paste
Anything left-over from Christmas lunch;
Turkey/other meats, vegetables, stuffing
50ml tin chopped tomatoes
500ml water
4 tbsp vegetable oil
4 tbsp soy sauce
8 curry leaves
Add salt and pepper to taste
METHOD
1. Heat oil in a saucepan until hot.
2. Add the leftovers and your chosen Karimix Paste and stir well for about 10 minutes, until everything is nicely coated.
3. Add chopped tomatoes and water. Stir well and bring to a boil.
4. Reduce to a simmer and add curry leaves and soy sauce. Stir well. Add salt and pepper to taste.
5. Simmer very gently for half an hour. Stir occasionally.
6. Garnish with coriander and serve hot with rice and naan bread.
7. Serve with Karimix Mango Chutney as a condiment.
