Recipe: Leek & Potato Hash from Communigrow

Volunteer Tip: With the leeks still going strong at the Communigrow field, it only felt right to include a recipe using them. This is a fantastic dish for using up leftover veg, something we at Communigrow are big fans of. This is one big hug of a dish and can easily be experimented with. You can mix up what veg you decide to put in the hash, but something fun to try would be using different spices. Try adding curry spice or smoked paprika when sautéing the veg to really add a punch of flavour.

Ingredients:

1 tbsp olive oil
Knob of unsalted butter
2 large leeks
3 garlic cloves, grated
250g leftover veg
salt & pepper, to season
250g leftover mash
4 organic eggs, optional
sesame seeds
2 spring onions, chopped

Method:

Over a medium heat add the olive oil and butter. Add the leeks and begin to cook down slowly.

Once the leeks are nice and soft, add the garlic. Keep this moving as we don't want the garlic to burn.

After 2 minutes, add your leftover veg. Incorporate the leek and garlic really well through the mix. Give it a good season of salt and pepper, don't be shy, be quite generous!

Lower the heat and spoon over your leftover mash. Try to mix it through the veg, this is a bit messy but worth it! Then press it down to form a patty in the base of the pan. Cook this on both sides for around 5 minutes or until golden and crisp.

In another pan fry your eggs. Just as you are finishing sprinkle with the sesame seeds.

Serve up the hash and top with your fried egg. Sprinkle over some spring onions to serve.
