An Exciting New Year for Canterbury Brewers & Distillers

2025 is shaping up to be an extraordinary year for Canterbury Brewers and Distillers, packed with innovation, growth, and exciting new ventures.

From the launch of three distinctive whiskies that showcase their mastery of flavour to a visionary proposal for transforming a riverside space into a vibrant community hub, this local gem is making bold strides. With a continued commitment to crafting exceptional spirits—like their beloved raspberry gin—and fostering connections with local producers, Canterbury Brewers and Distillers are setting the stage for a year full of flavour, creativity, and opportunity.

Foundry Whiskey

Canterbury Brewers and Distillers have recently launched three new whiskies to their impressive line-up of spirits. These exciting additions showcase the distillery's dedication to crafting unique and flavourful spirits:

  • Foundry Water Tower Rye Whiskey: This bold rye whiskey offers a spicy and robust flavour, perfect for those who enjoy a strong, self-assured drink. Aged in charred oak barrels, it delivers notes of cinnamon, clove, and oaky sweetness.
  • Foundry Clock Face Three Grain Whiskey: A harmonious blend of corn, rye, and malted barley, this whiskey presents a well-rounded taste experience. With notes of vanilla, caramel, and subtle spice, it makes for a versatile option for sipping neat or in cocktails.
  • Foundry Gear Wheel Corn Whiskey Virgin American Oak: This unique corn whiskey is aged in virgin American oak barrels, imparting a distinctive character. It offers a rich and complex flavour profile with notes of charred oak, vanilla, and a touch of sweetness.

Raspberry Gin

Canterbury Brewers and Distillers raspberry gin was a popular choice at the Canterbury Christmas and continues to be a favourite on the bar.

The balanced flavour profile combines a traditional juniper base with a sweet, tart raspberry note. This versatility makes it enjoyable, neat, with tonic, or as a base for cocktails. As with all Canterbury Brewers and Distillers spirits, produced from grain to glass locally in Canterbury, the gin resonates with customers supporting local businesses. We must mention the stunning pink label and packaging, which means it pops on the shelf nicely and draws attention, encouraging you to pour that evening gin and tonic!

Foundry Food & Drink Hub

The Foundry have recently submitted a planning application to make use of the disused area opposite the Foundry Brewpub on Stour Street. We would be so happy to hear from you with your thoughts.

If permission is granted, we will then look at finding funding.

In summary - our proposal is to build out of shipping containers & log cabins and include:

  • A gourmet mushroom farm & shop.
  • A Brewery & Distillery Shop
  • BBQ food stall with mushrooms, pulled pork & brisket.
  • A Foundry Brewpub bar.
  • 9 local artisan producer food & drink stalls.
  • Garden benches for 60 people

All along the river Stour in the Centre of Canterbury.
